1. Pla  ra  was  made  by  fermenting  the  fish  with  salt  and  khao  kuua  for  about  year.
2. And  if  a  variety  of  different  vegetables  were  cooked  in  a  little  water  chopped,  fresh  chillies  and  pla  ra,  it  became  a  curry  called  kaeng  awm
3. For  this  reason  Isan  restaurants,  most  of  which  have  a  clientele  made  up  primarily  of  Northeasterners,  like  to  add  an  ingredient  called  khee  pia  to  the  food.
4. The  menu  usually  consists  of  grilled  beef,  beef  larb,  som  tam  with  pla  ra  and  the  vegetable  curry  called  kaeng  awn.
5. The  first  of  these  are  the  drinkers,  who  eat  the  Isan  food  known  as  kap  klaem.
